A New Kind of Fast Food

Tuesday has become busy-crazy day. I teach boot camp in the morning (which was AWESOME!! Ya’ll rocks ROCKED it!) and then in the evening I teach back to back boot camp classes from 6 till 8. In between that time I have work to accomplish and somehow feed myself. Well… I looked at the clock at 1:30 it accrued to me I still hadn’t had lunch… I needed to something quick and filling so I can get on with my other tasks for the day. The thing about being hungry and pressed for time, is NOTHING sounds good. Is that just me? I don’t know. I couldn’t figure out what I wanted, but I needed substance and protein… I solved my hunger with this…

Hello Oikos Blueberry Greek Yogurt. Divinity in a cup!

And for substance I had a carb check bagel. I know some people think it tastes like card board (maybe I like card board….) but I think its quite tasty and enjoy eating them on occasion. I added some fresh blueberries in the yogurt and spread the greek yogurt on the bagel and viola! It was perfect. Filling and satisfying. How’s that for a random lunch? ;)

What’s your go-to food when you’re pressed for time and hungry?

  1. Haha I love your yogurt eating collage. You look super cute in a hat!

The Stella & Dot link doesn’t work FYI :(

  2. I love those bagels too. I’m all about almonds , baby carrots and a quick PB & J sandwich.

  3. First, I love to eat cottage cheese with fresh blueberries and sliced almonds.

Second, how did I miss that you were teaching boot camp and how do I sign up? Is there childcare available? I seriously need to get in gear!

  4. I can’t believe you teach two boot camp classes in one day! oy! you go girl!

that yogurt is SO good! i’m so glad you recommended it after my icky greek tester with Yoplait!

  5. I eat the heck out of those bagels- have had one for breakfast almost everyday at work for years. I throw them in the toaster & spritz some butter on top.

My quick & easy meal is a package of the flavor tuna (garlic is my favorite) mixed with a package of the precooked rice. Takes 60 seconds to heat & 30 to mix :)

Also- I don’t think I can make the party tomorrow night. 4 flights in 4 days & I will be exhausted and would be late if the flights were late/traffic was bad. Have fun!

  6. Since I started working from home, lunch is my biggest struggle of the day. I forget to eat, realize this and feel that I just want food as quickly as possible that doesn’t require me to cook or prepare. I find myself in a bind constantly, so it’s good to know I’m not the only person!

  7. I love yogurt too. I eat it almost every day for my mid morning snack. I bet you’re an awesome bootcamp instructor. Are you still teaching at the church you told me about once? I’d love to try to make an evening class sometime! Also, I’ve been wondering, weren’t you a school teacher before, do you still do that? Just curious :-)

  8. You are too cute enjoying your yogurt! I need to do a better job of keeping yogurt in the house. I don’t love it, but I know it is good for me and really fills me up. Thanks for the reminder!

  9. Hi Lauren,
I’m so glad that your sister did a post about you. I met Amanda at the Houston Bloggers lunch a few months ago and she told me all about you. Then I lost the info! Anyway, I read your story and it is very inspiring. I too strive to make healthier choices everyday. Thanks for sharing!
